Pure-bred Iberico pigs are raised in an ecological paradise and are fed with “bellota“ (acorns) in the pastureland in the south-west and north-west of Spain.
Pigs fed with acorns have a greater proportion of unsaturated fats, which reduces cholesterol. Oleic acid (found in olive oil) is the main constituent of the fat.
EATING ACORNS
Living free range, they eat 10kg of acorns per day. The fatty marbleisation in the ham comes from a rich diet of acorns and the healthy exercise they gain during their life cycle.
TRADITION & PATIENCE
During the winter season, the hams begin a long process in natural drying chambers.
Only after a minimum of 32 months of patience, sometimes 60 months for the finest specimens, can the hams achieve harmony of texture and aroma.
