All along the Portuguese border, the region of Extremadura is the perfect ecosystem for the Iberico pig. The oak trees forest (Dehesa) of Extremadura are the richest in acorn.

Near the village of Jabugo (Andalusia), the hot summers and warm winters accelerate the curing time of the hams. The lack of rainfall in this area strengthens the trees and their fruits. As a result, the acorns are incredibly aromatic.

Our 48 months Iberico ham vintage is an “aromatic explosion“, powerful and nutty with a long lasting tasting experience. This vintage pairs beautifully with medium and full body red wine.

In the village of Guijuelo (Salamanca), the cool summers and harsh winters favour slow and gentle curing time. In this particular climate, we were able to find a unique 60 months Iberico ham. Its long during time (over 5 years) create complex and elegant aromas and texture that will slowly melt in your mouth. Surely the most refined Iberico ham of our collection.

When most of the Iberian pigs eat acorns during one season, we have selected a limited number of pigs that eat acorns during two seasons. It increase their oleic fat infiltration and develop tender muscles.
The high content of oleic fat (>50%) paired with a rich marbling provides an exceptional nutty flavour becoming a unique Double Acorn Fed Iberico Ham.
